Kaancha Aamer Tok ; a summer treat

Mango is a darling fruit for the Indian masses. Even though the ripe and sweet mangoes are luscious with their heavenly taste, the raw green mangoes are also not any lesser.

Kaancha Aamer Tok” or the raw mango sweet & sour chutney……a popular authentic Bengali meal accompaniment or side-dish perfect for summer time. It goes well with the Bengali vegetarian as well as non-vegetarian thali. It gives your digestive system some respite from the effects of heavy, fatty and spicy foods. It is a very simple and comfortable dish often prepared by my mother, who loves to cook and have it often during summer when raw mangoes are available in plenty. It also acts as coolant for your stomach in summer and adds an extra zing to your meal. You can make it either runny (known as Tok) or thick (known as Chaatni or rather Chutney) as you like by regulating your quantity of water. Bengalis have their Tok or sweet & sour chutneys at the end of a spicy meal which concludes usually with a heavy on the stomach, non-vegetarian or vegetarian dish and just before tasting the dessert which acts as a buffer for the stomach in between to adapt to the transition from a salty, hot and spicy meal to a dessert and this Aamer (mango) tok thus is a perfect dish aiding in smooth digestion.

RECIPE :

Ingredients:

1.  Raw Green Mangoes : 3-4.

2. Turmeric powder : a pinch or two.

3. Sugar : 2 tbsp or as per taste.

4. Salt : less than 1/2 tsp or as per taste.

6. For tempering :

    Mustard oil / Neutral refined oil  : 1-2 tsp.

    Dried Red Chilli : 1

     Bay leaf : 1

     Black mustard seeds : 1/2 tsp.

6. Water : as required. 

 

Preparation:

1.  Peel the raw mangoes and cut into big pieces. ( Note: You may also include pieces containing the seed ).

2. Heat oil in a wok and temper the spices in it.

3. Add the mangoes and saute.

4. Add the turmeric powder & salt and saute well.

5. Sprinkle some water, cover it and heat it on medium flame for a few minutes to cook the mangoes.

6. Uncover, add water again as per requirement and bring it to boil.

7. Add sugar and stir for 2 to 3 minutes. ( Note: You may also replace sugar with jaggery ).

8. Turn off the flame, take it down and keep for cooling.

9.  Serve in a bowl along with a rice based meal. ( Suggestions: To really enjoy it, have it in the end of your meal ).
