With the advent of winter which is the peak season for nolen gur/date palm jaggery, my mind starts fantasizing about the various ways of experiencing its exquisite flavour. And since this is Christmas time, which exactly coincides with its season, the nolen gur could be very well celebrated in your Christmas special cakes and desserts.
Since baking is now an usual practice during christmas in many households in India, I never like to let it go blank. Other than cakes, pastries & muffins, swiss rolls are something that always lure me and I simply love them in just any flavour.
When you want all your favourites together, the best thing to do is to combine them in the best possible way. This is what I have done with these tiny quick swiss rolls, infusing the icing with the flavour of date palm jaggery and coconut. The nolen gur aroma and flavour is very mild and the aroma goes off on over heating or boiling. So, you have to really be careful with handling its flavour. The best way to use the jaggery is directly by powdering or mashing it and blending with your other ingredients, be it icing, cream or dessert.
Since I am not an expert in baking, I always look for easy and quick recipes to make my baking process as smooth as possible. I got this recipe while browsing and it really caught my eyes as it required no oven or cooker, the whole cooking could be done on a non-stick fry pan & the cooking time is only 8 to 10 mins. I just found it perfect to fit into my itinerary. The only challenge I faced while making it was whipping the cream with date palm jaggery for its flavouring which took a long time and that too I didn’t get stiff peaks. But, I left it there as I could manage with medium stiffness that I got. The cream was loosing its consistency after adding the jaggery and I had to continue whipping to reach to the desired consistency. As I was using hand whisk for whipping which almost took double the time, I would suggest you to use an electric beater to save your time. Anyway in the end, what came out made me happy as I got what I had hoped for i.e. my nolen gur flavoured swiss rolls were ready to be savoured…😊
