Stuffed Tricolour Parantha

Celebrating the spirit of our much adored tricolour, the symbolic of our Indianness, in food.
As Indians, on this day we celebrate our unity in diversity, our multilingual and multicultural identity which is unified into a single modern Indian culture. The huge spectrum of colours across cultural diversities converging into one and ultimately reflecting these three prominent colours of our nationality, the Kesari (deep saffron), the white and the dark green. The craziness of we Indians is such that we get emotional over everything we do and try to celebrate and rejoice every occasion like this to break free from the monotony and gloom of our mundane lives.
This time celebrating the spirit of our 72nd Republic day with this tricolour stuffed parantha (Indian pan-fried stuffed flatbreads) served with chutneys(dips) of three colours in the breakfast & feeling patriotic. The stuffed parantha had three layers of stuffings.๐Ÿ‘‡ Kesari (deep saffron) layer comprising of grated carrots sauteed with spices and salt. White layer consisting of sauteed coconut crumbs and flax seeds with spices and salt.
Green layer with boiled & mashed green peas sauteed with spices and salt. The dips or chutneys of three different colours of our Tricolour were made up of ๐Ÿ‘‡
Kesari chutney comprising of mashed carrots and pureed tomatoes seasoned with spices and salt.
White Chutney with yoghurt, finely grated raw coconut and chia seeds seasoned with spices and salt.
Green chutney made up of coriander leaves, mint leaves, green chillies and raw green peas seasoned with spices and salt.

It was a real fun creating and having an entirely tricoloured, delicious breakfast loaded with nutrients…๐Ÿ˜€๐Ÿ˜€
May all my fellow indians keep this spirit alive and hope all my pals from around the globe understand this Indian spirit of unity in diversity.
