On this anniversary day of implementation of our Indian Constitution, we commemorate our Indian identity and our unique unity in diversity. The spirit of our national festivals particularly the republlic day and independence day is symbolized by celebration of our esteemed Tricolour which is a mark what Indianness actually implies for. Celebration of the spirit of tricolour on this national festival definitely demands some tricolour food and drinks, which has become a kind of trend nowadays. We invariably indulge in preparing and having some or other tricoloured food to celebrate the day either in the breakfast or in lunch. This time, it was this easy and instant tricoloured dhokla for breakfast and here goes its recipe for you :

RECIPE:
Ingredients :
A. For white Dhokla :.
- Semolina โ 3 tbs.
- Curd โ 2 tbs.
- Salt โ As per taste.
- Sugar โ A pinch.
- Baking powder โ 1/4th tsp.
B. For Saffron Dhokla :
- Gram flour (Besan) โ 3tbs.
- Semolina โ 2 tbs.
- Curd โ 3 tbs.
- Asafoetida (Hing) โ 2 pinch. (optional)
- Black salt โ A pinch.
- Carrot (grated or ground) โ 2 tbs.
- Baking powder โ 1/4th tsp.
C. For green Dhokla :
- Gram flour (Besan) โ 3 tbs.
- Semolina โ 2 tbs.
- Curd โ 3 tbs.
- Coriander and mint leaves (ground to smooth paste) โ 2 tbs.
- Black Salt โ 1 or 2 pinch.
- Salt โ As per taste.
- Sugar โ A pinch.
- Baking powder โ 1/4th tsp.
D. For tempering :
- Dry red chilli โ 1
- Mustard seeds โ ยฝ tsp.
- Curry leaves โ A few.
- Refined oil โ 2 tsp.
E. For garnishing :
- Green chillies (finely chopped) – 1 or 2.
- Grated coconut – As per choice.

Preparation :
- Take three separate bowls for making batter for three individual colours.
- Mix the ingredients for white dhokla (Semolina, curd, salt, sugar and baking powder) in a bowl to make a smooth batter without any lumps.
- Pour the batter in a greased bowl and keep.
- In a pressure cooker or steamer, pour some water and put a wire stand in it. Now, keep the bowl with batter over the stand and put the pressure cooker over a medium flame and cover with a lid.
- Keep it for 15 to 20 minutes.
- Switch off the flame, open the lid & take out the bowl and let it cool.
- Your soft, spongy Khatta Dhokla is now ready.
- In another bowl, mix all the ingredients of saffron dhokla (gram flour, curd, semolina, hing, salt, sugar, black salt, carrot paste and baking powder).
- Pour the batter, mix in a bowl and follow the steps again from step 5.
- Your saffron dhokla is ready.
- Similarly, mix all the ingredients of green dhokla (Gram flour, semolina, coriander, mint paste, curd, salt, sugar and baking powder) together in a bowl and put it in the pressure cooker.
- Follow the same steps as mentioned from step 5.
- Your green dhokla is now ready.
- Take the three dhokla on a dish and keep aside.
- For tempering, heat oil in a pan, add 1 dry red chilli, mustard seeds and curry leaves and splatter.
- Pour the tempering over the dhoklas and garnish with some grated coonut.
- Your yummy soft dhoklas are now ready to be served. Serve with any chutney of your choice and keep the spirit of your patriotism alive.
