Summer fun with Litchi Popsicles

Summer months are a big bugger in most parts of India when it becomes unbearable to withstand the high heat & humidity that makes this season really a energy draining one. I personally hate summer season but despite of all these discomfort, summers are also full of pleasant surprises from the nature for which we kinda wait for its arrival. Lots of sweet & juicy fruits like litchi, mangoes, pineapples, plums, jamun are all great respite from the scorching heat of the season and work wonders in rejuvenating our body & enhancing our mood.

Mangoes have always been the greatest treat for summer but other than these, litchi tops the list of my favourites and in this season after a long time I received a carton full of litchis from my maternal grandparent’s home and relishing them fresh from the tree was a real fun. I have fond memories of my childhood associated with these litchis that we used to enjoy during our visit to my maternal grandparent’s home in the summer vacations. My grandpa used to sit for hours during the day beneath the tree just to save the litchis from crows & monkeys so that we are able to have them when we reach there. I remember those funfilled moments of childhood when we used to run to grab the litchis that would fall off from the tree. We would cut the seed into halves, pierce a stick inside & play by making spintops out of them. Those memories of childhood are really precious that will last for our lifetime.

Hope I have not bored you with all my memories of past, because I feel in some way or the other it may connect with you all. Not dragging it too much, now let’s move on to the making of these fun filled litchi popsicles that I have made from the sweetest litchis that I got few days back. As the shelf life of litchi is very short and I was having a plenty of it, I made these ice pops from pure litchi pulp so that I could relish its taste for few more days and trust me making them was really enjoyable. Just peel off your litchis, collect their pulp and juice, mix them well together in a blender and refrigerate in moulds of your choice in the deep freezer for few hours and your popsicles are ready to be sipped. You can add little sugar syrup if your litchis are not sweet enough.

Enjoy your own 100% natural ice pops with no added colour, flavour or sweetener and have in this burning heat to soothe your thirsty soul.
