
Have you ever imagined how wonderful & intriguing our nature is? Our mother nature has so much to offer us & make us awestruck in innumerable ways with all its wonders. From divinely delicious fruits like mango, which is a dessert in itself to the uniquely orchestrated forms in vegetables like cabbage & many more are just wonders of the nature’s creation. It is worth saying that even the best chefs in the world can’t create what nature has provided us with in the form of wonderful ingredients. While writing for this post, I am really feeling overwhelmed & blessed for all the amazing things that nature has bestowed upon us. We need to value those treasures by exploring the endless resources & making the most out of them. With this feeling in my heart, I made my recipe with 100% natural ingredients for simply enjoying the gifted flavours of nature in their purest form.

Summers are meant for fun and the scintillating heat inspires us to indulge ourselves in relishing something enjoyable & comforting that is perfect for the season. Cold drinks, ice creams, ice pops and kulfi(s) are all that we long for during this season to soothe our soul & body. Most of the time these food items are not so healthy due to their sugary nature & thus are not usually guilt free unless we deliberately make an effort to make it healthy. Also our vegan friends are unable to savour those fun filled stuffs that we all desperately need in the scorching heat of summer. So this recipe is meant for all who want a healthy, guilt free treat for their taste buds without compromising on the taste. As jackfruit seeds are considered as super food nowadays, you just don’t need to think twice before trying it. No more waiting, let’s try making it. The recipe is here for you below :

RECIPE:
Ingredients:
- Jackfruit seeds – 7-8 seeds.
- Coconut (freshly grated) Or Coconut milk – 2 tbs.
- Apple (peeled) – 1 medium sized ( Take a sweet variety)
- Dates (soaked in warm water) – 8-9
- Cinnamon (roasted and ground to smooth powder) – ½ tsp
- Chopped almonds – 3-4

Preparation:
- Cut & peel the outer white coat of the jackfruit seeds and pressure cook for 6 to 7 whistles to boil the seeds completely.
- Take out from the cooker and let them cool.
- Remove the outer dark skin from the seeds completely, as this dark part is bitter in taste and will spoil the flavour of your kulfi.
- Crush the boiled and peeled seeds and keep aside.
- In a blending jar, take the crushed seeds, grated coconut, deseeded dates, apple and cinnamon powder and blend them together to make a smooth, creamy paste.
- Add chopped almonds and 1 or 2 tsp water or coconut milk, if you find it too thick. Your kulfi mix is now ready.
(Note: If you want to use sugar, you can skip the use of apple and reduce the amount of dates as per need.)
- Pour the mixture in kulfi moulds and freeze for around 4 to 5 hours.
- Enjoy your guilt free Kulfis in this pricking summer.
